Greek Spinach pie with feta cheese (spanakopita)

Classic traditional Greek recipe, spanakopita. Its a filo pastry pie, delicious for snak or starter. Lots of calories, beware! :)

Ingredients
- 1 package pastry filo for pies
- 1 pound of spinach
- 100g butter, melted 1 cup olive oil in a bowl
- 500g Feta cheese
- 2 table spoonful cream cheese
- 3 tablespoons Parmesan or Pecorino
- 2 eggs
- pepper
Instruction
- First of all, wash the spinach very well and put it in a boiling water for 5 minutes until soften.
- Drain well and put in a large bowl.
- Preheat the oven to 180C
- Beat the eggs and add it to spinach
- Cut feta cheese with your hands in small pieces and put it also in the bowl with the Parmesan or pecorino and cream cheese.
- Seasoning with a little pepper.
- Mix all ingredients together and the stuffing is ready!
- Open the pastry and cover it with a wet towel. It will prevent the pastry to dry during the preparation.
- In a 35×25 pan bottom brush the pastry in between, one by one with the mixture of oil and butter.
- When you brush half of the pastry filo put the lovely stuffing and then add the other ones to finish.
- Bake the pie for one hour until golden brown.
