Za'atar Chicken Souvlaki -with Greek style salad

Souvlaki is a Greek dish of small pieces of meat grilled on a skewer; it's a popular Greek fast food. This Souvlaki recipe has the chicken marinated in lemon juice and zest, fresh oregano and garlic before it's sprinkled with Za'atar seasoning and grilled.

Ingredients
Serves: 5 servings
ingredients:
- 5 boneless, skinless chicken breasts, cut into 1½ inch cubes
- 1 large lemon, zested (about 2 tablespoons zest) and juiced (about ⅓ cup of juice)
- 2 cloves garlic, crushed
- 2 sprigs of fresh oregano
- 2 teaspoons Za'atar seasoning
- Skewers (if wooden, pre-soak in water)
Greek-Style Salad
Ingredients
- 1½ cups cherry tomatoes, halved
- 1½ cups diced cucumber
- 2 small sweet bell peppers (I used orange and yellow snack-sized peppers)
- ¼ cup Kalamata olives
- 1 ounce feta cheese, crumbled
- 1 tablespoon olive oil
- 2 teaspoons red wine vinegar
- 1 teaspoon fresh chopped oregano
- salt and ground black pepper, to taste

Instructions
In a large ziplock bag, place the chicken pieces, lemon zest and juice, garlic and oregano sprigs.
Seal the bag and place in the refrigerator for about 3 hours.
Remove the chicken from the bag (it doesn't matter if zest is still clinging to it) and place on pre-soaked skewers.
Sprinkle with the Za'atar seasoning on both sides.
Grill over medium flame for 4 minutes per side, or until the chicken is cooked through.
Instructions
Place all of the ingredients in a small bowl, toss to combine.
Serve at room temperature.
